Hawaii offers many different styles of luau, from a formal sit-down dinner, to an all you can eat buffet. The two main dishes served in traditional luau style are Kalua Pig, roasted in an underground oven called and Imu, and Poi, a purple-colored paste made from the root of the taro plant.
